Our DIY Patio & Toasted Turkey and Mozzarella Subs

The overgrown, eye-sore before.

It’s really hard to make your summer to-do list when you’re not sure if you’ll be able to walk or not. I remember before surgery wondering what our summer would look like. After our difficult few months, we didn’t put high expectations on ourselves for this summer. One project, though, would not be put off any more. Our house came with an in-progress deck that needed to be ripped out instead of finished. There was a wood square in the middle of the yard that has served as a deck, but why is it in the middle of the yard? The world may never know.

So, last year my husband pulled out the in-progress part of the patio and it’s been a dirt pit ever since. A bug attracting, muddy, eye-hurting dirt pit. Last weekend, we had the joy and pleasure of installing ourselves a brick paver patio. Installing a brick patio yourself has definite pros and cons.

Pro: You save thousands of dollars by DIY’ing it!

Con: You have to install it yourself, on the hottest weekend of the summer.

Pro: There are tons of calculators online to help you estimate your materials!

Con: These will not accurately calculate the materials needed and you will, inevitably, make 3 trips for more gravel.

Pro: Carrying 500 bricks from the garage to the worksite is a great workout!

Con: No explanation needed.

But the exciting part, is the project is done! We have a beautiful patio and now I get to decorate our new outdoor space!

Anyway. I wanted to share an easy, quick dinner recipe with you. While I was working my weekday schedule I needed some fast recipes that I had the energy to prepare after a day at work. I found this recipe in my America’s Test Kitchen cookbook The Best Simple Recipes, and have made it again several times. (By the way, you need to get a copy of this cookbook. I’ve made so many things from it and I would say 90% of them are a hit!)

These eat-with-a-fork sandwiches are an amazing combination of spicy tomato sauce, ooey-gooey mozzarella. and crispy toasty bread.

Also, can we just talk about the fact that I was ignorant to the beauty of pesto before this? Unacceptable. I use it constantly now, and I’m not sure what I would do without it.


This recipe starts with a quick tomato sauce concoction that includes garlic, red pepper flakes, diced tomatoes, and pesto. All the best things, right?


I usually use sub rolls for this, but brioche is what I had on hand, so we used it. First you spread some pesto on each roll, then layer it up!


The recipe calls for smoked mozzarella, but I usually just used sliced. I find it melts better.

Broil those sammies to a crisp and enjoy. I usually serve with a nice fresh salad and it’s a great weeknight meal! I think these would be a great way to use up some left-over turkey, especially after Thanksgiving!

Toasted Mozzarella Subs

  • Servings: 4
  • Difficulty: easy

3 tbsp extra-virgin olive oil

6 garlic cloves, minced

1/4-1/2 tsp red pepper flakes (these make the sauce really spicy. We found it a little too spicy for our taste with 1/2 tsp, but if you need to clean out your sinuses, go for it.)

1 28 oz. can diced tomatoes, drained

2/3 cup basil pesto

salt and pepper, to taste

4 sub rolls

1 1/2 pounds thin-sliced deli turkey

12 ounces mozzarella, sliced

  1. Adjust oven rack to upper-middle position and heat oven to 500 degrees. Heat oil, garlic, and red pepper flakes in large skillet over medium-high head until fragrant, about 1 minute. Add tomatoes and cook until mixture is dry, about 10 minutes. Off heat, stir in 2 tablespoons pesto and season with salt and pepper.
  2. Spread remaining pesto inside each roll, then layer with turkey, tomato mixture, and cheese. place sandwhiches on baking sheet and bake until edges of bread are golden and cheese begins to melt, about 5 minutes. Serve.



Full Circle

289 days is a long time. It takes less time to grow a baby from scratch. It’s a lot more than the days in in a school year. I spent 289 days away from my work in the emergency department. But thankfully, as of this week, I get to stop counting!

’tis the season for back to school pictures, so I had Ben shoot my back to work picture.

I had a great appointment with my surgeon last week. Not only did he give me the clearance to return to full-duty, but he said these magical words: “The patients who are doing as well as you at 5 months out are the ones who have great outcomes 5 years out.” What I’ve been waiting to hear! Work was an important step, but more important to me was how this injury would impact my life down the road.

So, Monday August 17, 2015 was my first day back in the ED! It went really well. I’m going right back to 12 hour shifts, which is definitely a challenge. But, if there’s one thing I’ve learned while having to relearn how to walk, it’s that something that seems difficult or painful at first won’t stay that way. My second day was more of a challenge than the first, but my charge nurses are great and willing to put me in an assignment that will work for me.

So it feels like everything has come full circle. My leg is no longer holding me back. It’s not perfect, but it probably won’t ever be.

While this little journey is coming to an end, I’m not closing my blog. I still want to share things with everyone. I have less time for yummy kitchen stuff, but I still want to post yummy stuff for you.

Quick and Cool Cucumber Salad

As promised, I put less than 2 months between blog posts! Win.

Aren’t you just loving all the summer vegetables that are in season? We have sweet corn a few times a week, and people from work have been bringing in arm-fulls of extra vegetables from their gardens.

I love a good side salad, but sometimes I want to make something just a bit different as a side dish. My mom makes some mean marinated veggies with Good Seasonings Italian dressing mix, but for some reason I can’t seem to replicate it.  This recipe is just a bit different, and it’s quick to pull everything together with stuff you have on hand.

FullSizeRender (18)I used cherry tomatoes, cucumbers, and kalamata olives to put a Greek twist on it. (It really, seriously needed some feta.) I’ve made it with just cucumbers before, and that’s great too. You could make an italian version with some fresh basil and a little mozzarella, and I’ve heard just cucumbers with fresh cilantro is good as well. This is a recipe you can change to fit whatever you’re making it with.

Plus, no cooking. Just whip this up and let it sit overnight or for a few hours and it’s good to go!

Quick and Cool Cucumber Salad

  • Servings: 4

2 cucumbers, peeled and sliced or chopped

1 1/2 cups chopped cherry tomatoes

1/4 cup apple cider vinegar

1 tbsp chopped fresh dill

1 tsp honey

1 tsp lemon juice

Salt and pepper to taste

Summer hiatus! And A World Blogger Award Nomination!

Well look at that. It’s August. I have terribly neglected my blog during the last couple of months, but it’s Michigan and it’s summer! I think Michigan’s finest season is summer and I’ve been busy balancing work and rehab with enjoying all there is to do this time of the year. Check the pictures for some highlights of my summer so far.

So, update on my leg: progress is slowing. I’m continuing to use the weight machines at the gym to strengthen my bad leg, and that’s going well. Lots of grinding in my knee joint, but it’s not painful. My biggest complaint really is the swelling in my ankle and foot after a day of sitting/standing.

With work, I plan ahead and wear compression socks (I have some great ones by a company called Sockwell that I just love!). But it creeps up on me at times I don’t realize it, and before I know it I’m sitting at a wedding with an ankle the size of a grapefruit. I just got a new compression sleeve from Meijer that has openings for the toes and the heel, so I can wear it with sandals. So far it seems pretty helpful! I’m doing seated work in a cardiology office, but I definitely feel better if I’m active. It’s hard trying to balance rest with just enough activity to keep my joint loose. Ben and I went for a 1 mile walk last week, and I was pretty proud of that. Getting the endurance back is tough.

Going into this beautiful summer season, I was worried I wouldn’t be able to enjoy very much of it because of my leg. Thankfully, that hasn’t really been the case at all! I think the only thing I would really like to do but will likely put off until next year is a tubing trip.

My next x-ray is August 12, and I’m crossing my fingers and hoping that Dr. will clear me for some short shifts in the ER!

Truth: I got the idea a month before the wedding to use a mirror to put our place cards on to add a little extra something. This had been sitting in my parent's garage for years since their bathroom remodel. Zucchini Bread

Our house has a little eating nook off the kitchen. I had this amazing vision of doing this DIY corner bench with Ikea bookshelves that had storage in them. It wasn’t working. We never used it, and getting to the storage was annoying. So, I decided to make over the space.

I got this Ikea Hemnes desk on sale and my dad put it together for me. I love it. It fits perfectly in the space and it works as an amazing little command center for our mail, and the cookbooks I use frequently.  FullSizeRender (10)

It’s been 7 months, 3 weeks, and 2 days since I’ve worked full-time. This extended period of time off has been a mixture of good and bad. Obviously, the bad included being operated on and unable to do things that require 2 working legs. No one ever expects to go through something like this, especially at my age. Our life for the last 7 months has been mostly out of our control, and that has sucked.

But I will say, there have been some good parts. Like, you know, not having to go to work. I’ve basically made my own schedule based on what I feel like doing each day. I’ve learned new things (knitting) and started new habits (swimming!). I’ve had the chance to spend more time with my friends and family (particularly this past holiday season) because I didn’t work my weird schedule. And while I have missed my coworkers and being a nurse tremendously, they’ve all kept in touch and I’ve seen several of them outside of work.

Today is my last day of medical leave. Tomorrow I start training for my temporary new job at the cardiology office. It’s a weird feeling having something I never thought would happen come to an end. It’s like life is almost back to normal. I’m hesitant to say we’ve made it through it, but it feels like we’re on the downward slope. There are moments– even when I’m standing!– where I actually forget that something happened to my leg.

It’s so, so excited.

So, anyway. Last week in our Door-to-Door Organics box we got literally 5 zucchini. I knew immediately I needed to make zucchini bread. I had never even had zucchini bread until last summer when my husband bought some from a farm stand while we were camping. It was delicious! I had no idea it even existed and it’s one of his favorites.phonto (1)

Each zucchini yields about 1 cup shredded, so I had a lot of zucchini on my hands. Earlier this week I tried scones with a lemon glaze, but I wasn’t thrilled with the results. Guess I better stick to the old standards.

Zucchini bread

  • Servings: 2 loaves
  • Difficulty: easy
  • Print

  • 3 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1 tsp salt
  • 2 eggs, lightly beaten
  • 2 cups sugar
  • 2 1/2 cups shredded, unpeeled zucchini
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup chopped walnuts or pecans (optional)
  • 2/3 cup raisins (optional)

Preheat oven to 350 degrees. Grease bottom and 1/2 inch up sides of 2 loaf pans, set aside. In a large bowl stir flour, baking powder, cinnamon, and salt. Make a well in center of flour mixture.

In a medium bowl combine eggs, sugar, shredded zucchini, oil, and vanilla. Add zucchini mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). If desired, fold in nuts and raisins.. Spoon batter into prepared pans.

Bake about 55 minutes or until a wooden toothpick inserted near centers come out clean. Cool in pans on a wire rack for 10 minutes. Remove from pans. Cool completely on wire rack. Wrap and store overnight before slicing.

The (temporary) new normal

You know, I can’t remember what it feels like to walk down the stairs like a normal person. It’s been 7 months since I first hurt my knee, and I don’t remember what it felt like to not have a bad leg.

But, the exciting news is that I think I’m going to remember someday soon.

I saw my doctor today for my 3 month follow up visit. How has it been 3 months?! (The real question is how has it already been 6 weeks since my last appointment because the 6 weeks after surgery dragged.) There has been a definite transition since the last time I saw Dr. I feel like I’m no longer “post-op” and now I’m pretty close to back to normal.

So I had an x-ray and doc said he couldn’t find the graft on the picture, which is a good sign at this point. If it starts to not heal well, there will be shadowing on the x-ray and we’ll know it’s not going to take. It can take up to a year for the graft to fully incorporate into the surrounding tissue, but we don’t have to baby the leg quite so much anymore.

So the good news:

  • I can start swimming again!
  • I can start using weight machines and soon will be able to do the stair machine and elliptical. (The elliptical was really hard for me after the initial injury, so this might be one of the last things I’ll try.)
  • I can ride my bike outside!
  • I can kneel on my leg! (Seriously, you don’t know how annoying it is to try to find something that might be under the bed until you can’t do it yourself.)
  • I have basically my full range of motion back!
  • I can walk upstairs like a normal person!

The okay news:

  • I can go back to work. This is just “ok” because of 2 things: 1.) I’m not going back to the Emergency Dept. yet. I’ll be doing telephone triage for our physician group. 2.) I’ll be working Monday-Friday 8-5. I have never worked this schedule before and it’s going to be a rough transition for me. One of the best parts of my normal job is the schedule, especially when it’s summer and Michigan-awesome outside.

I am seriously blown away by this whole process. 3 weeks ago I was just walking without crutches, and yesterday I did a big grocery trip to Meijer by myself. It’s amazing how much of a rehab real-life is. Each week is still bringing so much progress, I feel like I’m much further along than I was just 7 days ago.

Hubs is leaving me for 8 days to go to California, so it’ll be a week of eating cereal for dinner cooking for one. We’ll see where that adventure takes me.


PS- What do you think of my new layout? The picture at the top is quite literally the usual view from Bridge street, except normally there’s a dog waiting for some people food as soon as I walk out of the kitchen. ❤

Asparagus and Goat Cheese Risotto


A year or two ago when I first decided to try my hand a risotto, all the recipes I found warned of the difficulty and time commitment. They painted this scene of standing over a pot for hours, stirring to make that perfect creamy consistency.

Now, why would I do that if I could just go to Bistro Bella Vita and get the perfect dish every time?

But then I decided to try a recipe I found with asparagus and goat cheese, and I didn’t have to spend my day babysitting a pot of rice. (I did, get to buy a food processor which was one of the better decisions I’ve made in my life.) It went surprisingly well! I was as proud of a dinner as you can be. So, I’ve made changes to the original recipe along the way to make it my own.

Ben brought home some farm-stand asparagus this week, and it only took a few minutes of conversation for us to agree it needed to be used in a risotto. With goat cheese. We disagreed on the need for bacon in the dish, but decided to leave it out this time. Oh, and he bought a bunch of mushrooms for homemade pizza over the weekend, so we could add those in, too.

That’s what I love about this particular dish– it’s so versatile. You can use what you have in the kitchen, what’s in season, or alter the ingredients to pair well with a particular dish.

It makes for fantastic leftovers, too. Enjoy!

If you don’t have a food processor, buy one. You will find a lot of uses for it. I’ve used mine for cookies, protein shakes, seasoned butter…

Gradually adding in the broth is key here, make sure you wait until the broth is absorbed by the rice to add more.

You can use goat cheese crumbles or log, it will melt either way. I usually have crumbles on hand for salad.

Dinner’s ready!

Asparagus and Goat Cheese Risotto

  • Servings: 4
  • Difficulty: easy/moderate
  • Print

  • 3/4 cup arborio rice
  • 1 lb asparagus, ends trimmed
  • 1 1/2 cup mushrooms, sliced (optional)
  • 1/2 cup chopped onion
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1/4 cup white wine
  • 2 oz goat cheese
  • Salt & pepper to taste

Place rice in a bowl and add just enough water to cover the rice. Allow to sit for 5-10 minutes, drain, and reserve water. Set rice & water aside.

Cut the tips off the asparagus and place both the stalks and the tips into a pot. Cover with water and simmer until asparagus has softened. Drain, and separate tips from stalks, placing stalks into a food processor. Pulse until stalks become puree.

Set a skillet over medium heat, add butter and allow to melt. Sautee onion, mushroom, and garlic in melted butter until soft. Pour rice into the pan and toast while stirring frequently. After 2-3 minutes, add rice water and wine. Once liquid is reduced, turn down heat and add in broth 1/2 cup at a time. Once the liquid is absorbed, the rice should have a creamy consistency.

Stir in asparagus puree, goat cheese, salt, and pepper. Add in the asparagus tips and cook for 1-2 minutes until soft.


I’ve always loved the idea of summer…

Sorry for the really long hiatus! I haven’t had much to write about. I’m just over here walking, going up and down the stairs, doing all kinds of other things all by myself. It’s exciting!

So I was in the kitchen emptying the dishwasher today and obviously it made sense to make lemonade while I was up. It’s just what you do, right?

So, I juiced a bag of lemons, made some simple syrup, and then I thought “well, since I’m here, I should just add some lavender.”

And just like that, I had my favorite summer treat. Lavender lemonade.

So first you boil the water and sugar, making simple syrup. Once the water is boiling, add some lavender buds. You can find these at your local spice market or on Etsy. Let the water steep with the lavender for an hour. You’ll have to resist the urge to fall asleep.

In the meantime, juice some lemons. You can certainly use store-bought lemon juice, I have before. It’ll work in a pinch but it’s not as life changing as fresh lemon juice. So you get yourself a good juicer (I have this one from Pampered Chef and I love it.) and put in the work.

Mix it all together with some ice water and you’re done! Pour yourself a glass and enjoy yourself some summer.

Lavender Lemonade

  • Servings: 5
  • Difficulty: easy
  • Print


  • 2 1/2 cups water
  • 1 cup sugar
  • 1 tablespoon dried lavender buds
  • 1 cup of lemon juice (from 8 small lemons)
  • 2 1/2 cups ice water

Boil 2 1/2 cups water with sugar. Add lavender, cover, and steep for 1 hour. Drain lavender buds from water, reserving liquid.

Pour reserved lavender/sugar/water mixture into a pitcher,  add lemon juice and ice water. Stir well, and serve over ice.

Can you believe that a month ago I couldn’t even walk and now I’m making lemonade?! I’m so excited about my progress so far. My next x-ray is June 9th, and hopefully this will show that the graft is healing well. My surgeon already told me that if it doesn’t show healing it doesn’t mean it won’t, just that it needs a little more time to catch on.

I can do hard things

I never meant to put this much time between my last post and thidrew_crutchess one. I wish I could say that I’ve been, like, super busy but we all know that would be a lie. I’ve always been one of those people that is a lot more productive with a busy schedule. Like, if I have one thing to do I’m less likely to get up and do it than if I have 10 things.

Anyway, I’m officially almost done with the non-weight-bearing portion of my trip. (Happy to report I am out of my post-op hole. Those narcs were not a good trip.) This has been harder than I thought it would be, less painful than I thought it would be, and (like everyone said it would) it has gone by faster than I thought it would.

So, here’s a bulleted list to summarize my progress for those of you interested:

  • I can bend my leg to approximately 90 degrees passively, a little more if I help it.
  • I have read 2 books, and am halfway through a third.
  • I learned to knit. Seriously, if you find yourself in a similar predicament to my own, I highly encourage it.
  • I am this close to getting my leg perfectly straight.
  • I can sleep on my side again, which is exciting. I am not a back sleeper, plus I have a pressure ulcer from positioning during surgery on my butt cheek, so laying on my side is sweet, sweet comfort.
  • The cat can safely walk across my knee without it hurting.
  • I have watched 4 seasons of Grey’s Anatomy. Seriously? Seriously. I feel like it’s helping me keep my edge. (By picking out all the errors, not by giving me actual medical knowledge. Who knew so many people flatlined during plastic surgery!)
  • I’ve found a way to venture up the stairs, if only to take a shower.
  • I will never, ever take simple things for granted. When this is all over and I can carry my own glass of iced tea to the table, I will be a happy girl.
  • My husband should probably be considered for some type of sainthood.
